veggie side dish

  • Hi, I'm new here. Introduced myself on a different thread, but I'll be official and do a whole introduction thread on my own. I've been on South Beach about 9 weeks and have lost 23 lbs. Hoping to make that 50 lbs. by time for my best friend's wedding in September.

    Here's my veggie recipe. Enjoy!

    1 yellow squash, sliced
    1 zucchini, sliced
    1 red pepper, cut into large pieces
    1 bunch broccoli, cut into florets
    1 Tbs. olive oil
    1 tsp. garlic powder
    salt and pepper to taste
    shredded parmesan (optional)

    Combine all veggies in a bowl. Add olive oil, garlic powder, salt, and pepper and stir until well coated.

    Spray a non-stick pan with cooking spray and heat pan over medium flame. Add vegetables. Cover and cook for 8 to 10 minutes, stirring occasionally, until tender. Garnish with parmesan if desired.
