I don't know if this has been on here before, but thought I would pass it on...I made Fresh asparagus tonight and it was wonderful!
Bunch of Fresh Asparagus
Snap woody end off
Place in Boiling Saltwater, blanch for 5-10 minutes, check for desired crispness
Drain, place back in pan
Add a little olive oil, maybe a teaspoon or 2
Squeeze 1/2 a lemon over
Add salt to taste
Toss and enjoy!
1 bunch fresh asparagus
PAM or other flavored cooking spray
Garlic (dried or crushed for fresh)
1/4C shredded Parmesan cheese
NOTE: I do this all pretty much by feel...
Preheat oven to 400-deg. F
Take large cookie sheet or half-sheet pan & spray liberally with PAM or
olive oil flavored cooking spray.
Clean asparagus by rinsing under water, then snapping off lower stem:
that is, bend till it breaks naturally. Line up asparagus stems on
cookie sheet/baking tray till entire bunch is done.
Spray asparagus again with either olive-oil or garlic flavored cooking
spray. Sprinkle on garlic powder or crushed garlic.
Slide baking tray into hot oven & roast for about 15 minutes (20 minutes
if you like well cooked veggies). After 15 mins., pull out & sprinkle on
parmesan cheese, then slide back in for 2-3 mins. to let the cheese melt
a bit.
