Hummus Stuffed Zucchini
3 courgettes (zucchini)
one tin chick peas (garbanzos)
2 tbsps chopped parsley
1 tsp coriander
1 clove garlic
1 small onion chopped very small
1 Tablespoon tahini (sesame paste)
1tbsp lemon juice)
salt and pepper
Cut the courgettes long ways and scoop out the seedy/pithy bit to make boats. Mash all the other ingredients together and pile in to the boats. Bake for 30 minutes in a 350 degree oven. 6 "boats".
