Chickpea Salad

  • Decades ago I frequented a local steakhouse for their salad bar and became addicted to their hominy salad, which I now make every Thanksgiving. This is very similar:

    1 can chickpeas, rinsed and well-drained
    1 green onion, finely chopped
    1 jalapeno, finely chopped (check heat before adding all of it!)
    2-3 T. mayonnaise
    salt/pepper to taste

    Chill several hours to allow flavors to blend.
