Oven-Roasted Veggies - Thumbs Up!
This isn't really a recipe but just wanted to say that I'm on day 2 of Phase 1 of SBD and I made the oven-roasted veggies (recipe in the SBD book) and they are so good! Very easy to make and the olive oil really brings out the flavor of the veggies.
Here's the single serving I made, a bit different from the book.
1/2 medium-large zucchini, sliced
1 small yellow squash, sliced
1/2 green or red bell pepper, sliced
1/4 red onion, sliced or chopped
1 clove garlic, minced
1 tsp olive oil
salt, pepper, paprika, and dash cayenne
Roast on 425 for 20-25 minutes.
