French Mustard Chicken

  • Okay ladies - I found this recipe while reading the Health magazine during my elliptical cardio workout - I know this could be made OP(put my changes/suggestions in red) - I just wasnt' sure about the honey - it looks like everything else distributed by 4 would be ok - please tell me what you think - any other changes - and do you think the tbsp of honey would be that bad since it is for 4 servings??? It looks and sounds yummy. I went and looked it up this morning at www.unclebens.com - I think we could probably find alot there to make OP too.

    INGREDIENTS
    3 cup(s) UNCLE BEN'SŪ Natural Whole Grain Brown Rice cooked
    1/2 tsp. salt (Morton's Lite)
    3 cup(s) vegetable oil cooking spray
    1 clove(s) garlic clove(s) minced
    1 lb chicken breast boneless,skinless
    1 Tbsp. honey (??)
    3 Tbsp. Dijon mustard
    1 Tbsp. balsamic vinegar
    1 tsp. tarragon
    2 cup(s) mushroom chopped
    3 cups broccoli chopped
    1 onion(s) medium sized/chopped

    INSTRUCTIONS
    Prepare rice according to package directions.

    Heat large skillet coated wit cooking spray over medium-high heat. Ad chicken; cook, stirring 3 to 5 minutes or until chicken is brown and partially cooked. Add broccoli, mushrooms, onion and garlic; cook 4 to 5 minutes or until vegetables are crisp tender. Stir in rice, mustard, honey, vinegar, tarragon, salt and pepper. Cook, stirring 3 to 5 minutes or until well blended.
