Rotel Spicy Skillet Chicken

  • 4- boneless, skinless chicken breasts
    1 can Rotel
    olive oil
    1 large onion, sliced
    1 small can sliced mushrooms
    f.f or part-skim mozzarella cheese, shredded


    Saute chicken breasts in 1-2 tbsp. olive oil until cooked through. Remove from skillet and keep warm. Add onions and mushrooms to skillet and cook until onions are crisp-tender. Add chicken back to skillet. Add Rotel, and sprinkle mozzarella over all. Cover and cook on low until cheese is melted.
    This is super easy to make, and has SUCH great flavor!

  • Rotel is a brand of diced tomatoes that have diced chilis added to them. They have regular, mild, bold, Mexican, Italian and chili flavored varieties. They are wonderful added to bean soups.
