chocolate bread pudding

  • I am looking for a recipe for chocolate bread pudding, I think its a weight watchers recipe. I had it a few years ago, and lost it. It is made with white bread, chocolate, milk, and I can't remember what else. It has 2 points per serving I think, and can be made in the microwave. Does anybody remember this recipe? Thanks!

    OK, so I kept on looking and finally found my Weight Watchers recipe for Chocolate Bread Pudding. It is sooooooooooo yummy, and its only points! This is from the WW September 1999 magazine.

    Chocolate Bread Pudding

    1 2/3 c skim milk, divided
    3 TBS semisweet chocolate chips
    1 oz square unsweetened chocolate, chopped OR oil and cocoa powder according to pkg directions to equal 1 oz chocolate
    1/2 c sugar
    1/2 tsp vanilla
    2 large eggs, lightly beaten
    4 cups cubed french bread
    cooking spray

    Preheat oven to 350 degrees. Combine 1 c milk and chocolates in a large microwave-safe bowl. Microwave on High 3 minutes, or until chocolate melts, stirring every one minute. Add remaining 2/3 cup skim milk, sugar, vanilla, and eggs, stir well. Add bread cubes, toss well to coat. Let stand 10 min. Spoon mixture into an 8" square baking dish coated with cooking spray. Bake at 350 degrees for 25 min or until set.
    Yield: 9 servings

    Cal: 145, Fat 4.4, Fiber 0.5

    Note, I use egg substitute in place of the eggs, cocoa powder and oil in place of the unsweetened chocolate square, and reduced fat white bread, which I have figured at 8 servings to be 3.5 points a serving. Enjoy!
