No Crust Strawberry Pie

  • I originally got this from a different web site but have modified it just a bit. You can garnish it with whipped cream or even yogurt. I like it plain and it is so good it is what my son wants for his birthday party. It makes one pie (8 servings). It has 240 calories plus the calories from the strawberries (depends on how many you use).

    24 ounces of fresh strawberries - I slice up large ones
    2 of the .8 ounce packages of sugar-free cook and serve Vanilla pudding mix
    2 of the .3 ounce packages of sugar-free strawberry flavored gelatin (Jello)
    2 cups of water

    Directions
    Rinse and hull strawberries. Distribute evenly in a 10-inch pie pan
    In a medium saucepan, combine pudding mix, gelatin mix and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired.
  • Barb - this sounds great! I wish I'd found this during strawberry season! I wonder how it'd be with thawed frozen strawberries? I can get pretty good quality frozen fruits that come from a local farm.
  • It's not bad with the frozen strawberries. The texture isn't as nice since they end up a bit mushy but the taste is great.
  • this pie is good I used to eat this on weight watchers! never thought about it being sbd friendly!!
