Goat Cheese and Roasted Garlic Salad

  • Here is a salad I made on my first day of Phase 1:

    Goat Cheese and Roasted Garlic Salad

    1 cup spring greens
    1 cup shredded iceburg lettuce
    2 tablespoons herbed goat cheese
    2 tablespoons roasted garlic cloves (you can make these yourself or buy them premade)
    salt and pepper, to taste
    equal parts red wine vinegar and extra virgin olive oil (about 2 tablespoons of each)

    mix oil and vinegar along with salt and pepper in a glass bowl
    assemble greens
    crumble goat cheese on top
    sprinkle garlic on
    toss with vinegarette
    enjoy!
