New Breakfast Treat

  • I'm new to the SBD so hopefully this recipe is ok for Phase I. I've lost 67 pounds on the Zone Diet but need to lose 25 more pounds. The SBD is more flexible on the maintenance level, and I was getting bored.

    saute 1/3 cup of red onion in olive oil
    add 1/2 cup of egg substitute (or 2 real eggs)
    heat up 1/4 cup of black beans in micro
    after egg mixture is cooked, add beans then
    1/2 cup salsa
    sprinkle shredded cheese on top and microwave for 45 seconds
    top with 1 tbls of guacamole.

  • i tried this this morning (well it was more like afternoon but i got up rather late). anyway it was great. i have a real problem with eggs (scrambled eggs, frittatas etc. make me gag) but this had enough other textures and tastes going on that i didn't even notice the egg.

  • Sounds good but I guess you would have to make sure that the salsa doesn't contain sugar right? I know the one I really enjoy does.
  • I didn't know you could have black beans in phase 1!! I am on day 13...so I will start having them soon anyway...but I am already learning a lot here, thank you!!
  • This was one of our favorite breakfasts in ph1 - it was quick, and easy, and yummy - we all liked it (even my toddler)!
