Hamburger Minestrone Soup

  • 1 lb of 90 percent lean hamburger (ground beef)
    1 medium onion, chopped
    2 cans beef broth
    3 cans water
    1 can diced tomatoes 14.5-16 oz
    2 cups finely shredded cabbage
    2 stalks celery, diced
    1 can kidney beans (white or red), drained and rinsed
    2 Tbs Italian seasoning
    1 tsp dried minced garlic (or use 1-2 cloves fresh, minced)
    salt and pepper to taste

    Saute hamburger, onion, and garlic if using fresh. Drain off fat (rinse if you like in hot water). Add remaining ingredients and bring to boil, reduce heat to simmer for 30 minutes.

    Serve with FF parmesan cheese, and NO garlic bread
  • I made this last night omited the beans and used coleslaw mix, was very good.
  • LouLouBelle - this was delicious! I'm just not a soup maker by nature, although I'm trying to start. This was so good and easy, and made enough for dinner for 2, lunch twice, and pre-dinner soup for 2 another meal. It was filling and delicious and warm!

    By the way, the recipe didn't say whether the tomatoes should be drained or not. I didn't drain them (they were canned in juice), for the record.
