I would like to start preparing some veggies in advance. Like sliced bell peppers, celery, cucumbers and onions and maybe make salads for 2 days in advance. Does anyone know if them will keep for two days I know the greens will but the peppers, celery and cucumber.

They should keep in a covered dish in the fridge for a couple of days.
They'll be fine for a couple of days. Sometimes I prep a whole salad the day before. On the bottom of the container I put the dressing. Then the sliced veggies (cucumbers, avocado, green peas, peppers etc), then the greens on top and the sliced chicken/protein and a fork on top of those. This keeps really well and all I have to do the next day is toss it.
I prep a whole salad without any wet ingredients (tomatoes, and dressing) and it keeps - in an airtight container in the fridge - for THREE DAYS. It's much easier.
