Ureka! I've found it! Yummy/lowcal/easy!

  • Ok everyone, I just have to post. Today, I sprayed a cookie sheet and put eggplant slices on it. I baked it on 350 until it was a bit browned on top and soft. I then waited for it to cool and when I wanted a snack at night, I took 3 slices (it's only 20 calories per cup) and put about a teaspoon of mild salsa on top of each. I ate it like it was a soft taco and WOW! It was so yummy! It was also very satisfying and I had to remind myself not to feel guilty!

    You could probably alter this in many ways, but I just wanted to share. It's so easy! Maybe everyone already does this? Well if not, you guys totally should!
  • That sounds like an awesome idea. I've never tried eggplant (that I can remember anyway). I'd love to experiment and broaden my vegetable horizons. I might just add that to my grocery list for this week. Thanks for sharing!
