Healthy french toast!

  • So maybe this should go in the recipe section, but I think I just made a really great low-cal, healthy breakfast and I feel like I should share it!

    This is Lauren's french toast!

    I whipped together 2 egg whites and a couple splashes of unsweetened, vanilla almond milk, dipped in 2 slices of Nature's Own 100% Whole Wheat bread(100cal for 2 slices), popped it in the pan and cooked it to my liking. I measured out 1/4c almond milk, but I only used about half of that, and I used about half of the mixture all together to make my french toast. The mixture is easily enough to make at least 4 slices of french toast; I had 2.

    Topped it with 1/4c sugar free pancake syrup (Log Cabin brand - 20cal), 1/2c blueberries, and nonfat vanilla Greek yogurt (Oikos brand - 120cal). As for the yogurt, I ended up eating the whole 5.3oz container, but I maybe put half of that on my french toast.

    If I hadn't eaten ALL the yogurt, I'm putting this at a grand total of 238 calories per serving. It's probably not good for those of you watching carbs/sugar, but for those who aren't, it's fantastic. Give it a shot!
  • I have made something similar to your recipe before though no greek yogurt... Still sooo good and your recipe's not even 250 cals?! Niiiiice.

    I don't know if you like stuffed french toast but in case you do, try a tbsp or two of your favorite jam/preserves in between the bread slices like you would a sandwich then dip in egg/milk mixture and cook as you normally would, maybe a bit longer to ensure it's fully cooked inside.
  • Really, without the toppings, the french toast itself is only 118 calories per 2 slices (59cal a slice). I used unsweetened almond milk, which is only 30cal a serving so my little splashes were practically nothing, lol. The stuffed french toast sounds good; I might try that!
