So maybe this should go in the recipe section, but I think I just made a really great low-cal, healthy breakfast and I feel like I should share it!
This is Lauren's french toast!
I whipped together 2 egg whites and a couple splashes of unsweetened, vanilla almond milk, dipped in 2 slices of Nature's Own 100% Whole Wheat bread(100cal for 2 slices), popped it in the pan and cooked it to my liking. I measured out 1/4c almond milk, but I only used about half of that, and I used about half of the mixture all together to make my french toast. The mixture is easily enough to make at least 4 slices of french toast; I had 2.
Topped it with 1/4c sugar free pancake syrup (Log Cabin brand - 20cal), 1/2c blueberries, and nonfat vanilla Greek yogurt (Oikos brand - 120cal). As for the yogurt, I ended up eating the whole 5.3oz container, but I maybe put half of that on my french toast.
If I hadn't eaten ALL the yogurt, I'm putting this at a grand total of 238 calories per serving. It's probably not good for those of you watching carbs/sugar, but for those who aren't, it's fantastic. Give it a shot!
