Spicy Mango Pork

  • I made this last night and it was awesome, so I have to share.

    6-8 lean pork cutlets or boneless chops
    1 large mango (peeled and cut into large pieces
    1/2 cup white white
    cooking spray (I used canola)
    sea salt to taste
    mango habanero rub (from red monkey)

    You need a pan that is deep enough to hold the pork, mango, and wine.

    Spray your pan well with cooking spray.

    Cook the pork over medium heat, using cooking spray and sprinkling with sea salt and mango habanero rub as it is cooking.

    When the pork is cooked remove it from the pan.

    Spray the pan again and put the mango in and sprinkle it with the mango habanero rub.

    Add the pork back to the pan on top of the mango.

    Pour the wine over the top.

    Turn the heat down to low and allow to simmer until the wine has almost cooked completely away and the mango has browned.



    I served this with dreamfields rotini and sauteed zucchini and yellow squash. It was delicious. Red Monkey seasoning are really yummy, but if you don't want to get that you could use your favorite spicy seasoning or even some fresh habanero.
