Hemp milk, seitan, and other items from the health food store

  • I discovered hemp milk (actually after reading about it here) and all I can say is wow. It is so creamy and delicious! My son drinks almond milk each morning, but once we get through this container I'm switching him to chocolate hemp. He's a beanpole and could use the calories and fats. It's the best to make my chia pudding with too.

    I also tried something else that had what I think was seitan in it. It was sort of little pieces of a tofu like substance that was drier and a bit chewy. As with tofu, it did not really posses a taste of its own, but rather absorbed the sauce flavor. All you veggies and anyone else who cooks with seitan - ideas for prep or dishes? I'm assuming it's SBD friendly like tofu is.
  • I love both Hemp Milk and seitan. I have been making my own seitan for years and using it in place of meat in lots of recipes. It's really good in stroganoff. I'll check my recipe collection for some links. I've always thought it was South Beach compatible because it's almost all protein even though it's made from grain. so no hit to blood sugar.

    I'm looking forward to making "ice cream" with hemp milk. I think the thick, richness will make a really good frozen dessert.
  • I haven't tried hemp milk, as I'm a fan of almond milk, but I think I'll try it now that I've heard your comments. I really like seitan, although I don't eat it often. It has much more substance than tofu, and absorbs the flavors of sauces and seasonings better, too. I like to make Philly cheesesteaks with it. Yum!

  • Bea ~ I buy seitan at Trader Joe's or Wegman's. I'm sure WholeFoods carries it, too.

    I just dice it up and saute it in a little olive oil with lots of garlic and onions, and sometimes add mushrooms and peppers. Once the veggies are soft, I put a slice of RF provolone cheese over it, then carefully scoop it up with a large spatula and lay it on a wholegrain flatbread or ww club roll.

  • OK - now, what is tempeh? Is it different from seitan? Maybe what I ate was tempeh rather than seitan. Is tempeh chewy?
