Cottage cheese in scrambled eggs

  • If you enjoy scrambled eggs/omelettes, try this quick change: add some (1/4 cup) cottage cheese to a few eggs (I use 1 whole and two additional whites). Whip it up with some black pepper and prepare as you normally would, adding to sauteed veggies and so forth. The result is a fluffy and delicate twist on typical scrambled eggs. And the protein punch it packs is an added bonus - this breakfast (or dinner!) keep me satisfied for hours.
  • I've never tried cottage cheese in a scramble, but I often use it in an egg-based breakfast casserole. I creates a nice texture - I'll have to try the combo this way

  • Jane - I often add salsa! It's delicious. But do be aware: if you're a person who likes her eggs "dry," adding the salsa only makes this dish wetter, as the cottage cheese lends a wetness to the finished product to begin with.
    And Meg, I make a great fake pancake by whipping cottage cheese, uncooked oats, eggs (or only whites, your preference) and spices (cinnamon, etc.) in a blender, then pouring the batter by 1/2 cups full onto an ungreased hot griddle. You've likely seen the recipe for "Protein Pancakes" floating around. Great stuff.

  • This sounds interesting... I may just have to try it. Already have and egg and side of cottage cheese every morning. So I suppose I can try mixing the two. :-)
