What to do with beans

  • So my new "veggie" (though not strictly a veg) of the week is cannellini beans. I noticed they are a decent ratio of protein to carbs, bulky and low cal so thought I'd crack on any have some. Bought them in a can so I don't need to simmer them for days on end but if I like them I'll be getting a pressure cooker for them, but I don't know what to cook with them.

    Looking for a meat recipe that disguises the unfamiliar taste a wee bit, but nothing hot, not lots of other veggies and absolutely definitely no tomato. Any suggestions?

  • I make a lot of stuff with beans. All kinds of beans, we love them. However if you are looking for something with beans but is not "beany" Try some soup.

    6 cups chicken stock (I make my own but you could use any brand/type, Better than Bouillon is good)
    1 "bunch" Chard
    1 15.5 oz can of white beans (any of the types will work)
    garlic (to taste)
    red pepper flakes (to taste)
    Parmesan Cheese

    Rinse the Chard well. (it is sandy)
    Chop off the ends, and discard
    Chop the rest in a very rough chop, like seriously big pieces
    Boil for 10 minutes and rinse again
    Rinse the beans very well
    Put everything (Except the cheese) in a soup pot and bring to a boil. Simmer for an additional 10 minutes.

    Serve with cheese on top.

    I have also put chicken in this and it is yummy.

    You get your beans, and protein with not a lot of calories, carbs, points (whatever you count). The only thing is watch the sodium. If you do not make your own chicken broth, the sodium can be high in the store bought kind.
