Georgian Egg Salad (Russian)

  • 8 large hard boiled eggs. 6 Tbl.butter(unsalted, softened at room temp)1/2 cup ground walnuts. 4 Tbl. fresh dill (minced) 4 Tbl.fresh minced cilantro. 4Tbl.minced scallions, (white part only) 1/4 tsp salt. Mash eggs with softened butter, stir in other ingredients, mix well, serve on wasa crackers or dip with celery sticks. Carbs 1.6G each serving, This serves 8.
