minestrone soup vegan

  • Crock Pot Minestrone

    1 medium onion, chopped
    2 medium carrots, thinly sliced
    2 stalks celery, cut into 1/2 inch pieces
    1 red bell pepper, seeded, cut into 1/2 inch pieces
    1 medium zucchini, scrubbed, sliced into 1/2 inch rounds
    2 cloves garlic, minced
    2 14 1/2 oz. can vegetable broth
    1 28 oz. can crushed tomatoes
    2 15 1/2 oz. cans kidney beans, drained
    2 tsp. dried marjoram
    1/4 tsp. coarsely ground black pepper
    1/2c brown rice

    Add all ingredients to crockpot. Cover and cook 8 to 10 hours.
    8 servings.
