Eggs & egg substitutes

  • I like to have scrambled eggs w/ peppers in the morning, but I hate to cook every day. I usually use egg whites & egg substitutes mixed w/ peppers and onions. Can I freeze it once I'm done. I'm guessing it will keep in the fridge for a while, but if its fast & easy I'm more likely to have it.
  • You can freeze egg substitutes and eggs scrambled for about three months - but I have to warn you, I've only done this if they're part of something - say, a burrito or breakfast sandwich. I've never simply nuked and eaten them.
  • I make "egg muffins" for my husband. On Sunday night I will lightly cook whatever veggies he wants (usually peppers and onions), let them cool and then add them into the egg substitute. Then I pour them about 3/4 full into a muffin tin and top with cheese. I cook at 350 until they are done (usually 15 minutes, but I just check them.) I put them into a tupperware container and then he can just microwave them in the mornings (he has 2 a day).
