Barley, Lentil & Rice Soup

  • I made this yesterday since we hadn't gone for groceries yet. I calculated everything and came up with it being 1 pt. per serving for 2 cups of soup. (I had bowls of soup all over the counter top). It's very filling and tasted pretty good.


    I filled a large soup pot 3/4 full with ff beef broth
    1/4 c. lentils
    1/4 c. long grain rice
    1/3 c. barley
    1/2 c. instant brown rice
    1 c. uncooked whole wheat penne pasta
    2 stalks of celery diced
    1 can green beans drained
    3 small cans tomato sauce
    Italian seasoning
    Salt to taste

    Cook until the celery is tender. Makes 8-2 cup servings.
    Each serving is 1 pt.
