Mexican Rice

  • This was delicious and satisfied my need for Mexican take out...I also made homeade whole wheat tortillas, pintos, and chicken w/ veggies.

    1.5 C brown rice
    2 C boiling water
    .5 C tomato sauce
    1 jalepeno diced (could have more or less)
    1/4 t garlic pwd
    1/2 t cumin
    2 bullion cubes (I use soup base instead cuz it has less sodium)
    1 t of butter substitute

    Mix all ing. in an 8 inch baking dish.
    Cover in foil
    bake at 375 for 1 hour
