Mexican Lasagna

    Recipe Name: Mexican Lasagna

    Ingredients:

    4 ( 6 inch) tortillas
    1 (15 oz.) can black beans, drained and rinsed
    1 (14 1/2 oz.) can no added salt stewed tomatoes
    1 1/4 lbs. ground skinless turkey breast
    1/2 cup chopped onion
    1 cup frozen corn
    1 cup salsa
    6 oz. reduced fat cheese
    1 Tbsp. cumin
    2 Tbsp. chili powder
    Morton Lite Salt®
    pepper to taste

    Preparation:

    Coat a skillet with cooking spray and brown the turkey. Add the onions and seasoning. When onions are tender add the tomatoes, beans, corn, and salsa until warmed through.

    Coat the bottom of a casserole dish and layer as follows: meat mixture, cheese, tortillas. Top with remaining cheese.

    Bake in preheated oven at 425F until cheese is melted.

    Makes: 6 servings

    Serving size: 1/6th recipe
