Are all beans ok? I see a lot of recipes that have black beans and I don't care for them. Are kidney beans an ok substitute say in chili for Phase I? I didn't think the book was clear enough.

Faye, the book really is NOT too clear and needs updating. Check out the Phase I Revised Food list. Almost any dried legume is fine. I make my chili with a mix of beans but kidney ebans are always in there.

apparently the only bean(s) that are not okay for phase 1 are Pinto and Black eyed peas...

I beleive based on the Revised Food list that both Black eyed Peas and Pintos are Phase I foods.
