Ziploc Icecream?
I was wondering, for those of you who eat the ziploc ice ream, have you ever done other flavors ( coffee, chocolate, mocha etc) and would it be acceptable to use evaporated skim milk intead of regular. I need a bit more substance...or do you think it would give the ice cream an off taste?
I was pleased with the result but let's say there was still lots of room for improvemet

Evaporated skim would work and make it creamier BUT remember that it is concentrated milk. A half cup is the same as a full cup of skim so adjust your dairy allowance accordingly. I bet the other flavourings would work too.

Ruth, I noticed you changed the recipe to evaporated skim milk. Did you try it out yet as I haven't. I imagine it would be much better, though.

Well, heavy cream is NOT on South Beach. I did try it a year ago and it was OK. I use evaporated skin a lot in recipes calling for cream.

Land O Lakes makes fat free Half and Half that is recommended in the book. I use it all the time.

Anne, I really didn't like the Fat Free Half n' Half in my coffee, though I used in in the cauliflower and found it inoffensive there. What do you use yours for?

Mashed potatoes or mashed sweet potatoes, smoothies. Anything in place of non fat milk.

I made the ziploc ice cream with evaporated skim milk last night. Turned out great and really creamy. Thanks for the suggestion, Little Chick!
