I googled "Chile Colorado" and this is what I got.
8 dried red chiles (such as Guajillo, California or New Mexico) rehydrated and ground into a paste *see below
3lb beef roast with enough water to cover
1 can beef broth
1 can tomato sauce
4 cloves of garlic, peeled and finely diced
1 tablespoon dried oregano
1 teaspoon salt
It sounds like you should be ok , however, be prepared that anything that goes with it such as cornbread, corn or white flour tortillas are
Stay strong and don't start on the accompaniments. If....you were saying, "I can't NOT have just one tortilla, I would take my own Whole Wheat. Obviously, it would be much better if you just had the chile and avoided the starch for now. You will be readding that very soon.
