Coconut milk has a decent amount of fat in it (not the good kind, sadly), so if you substitute, try putting in a little oil (if it'll mix) or maybe a little Smart Balance (or other trans-fat-free margarine) to make up the difference. Or Fat Free half-n-half?
I use coconut milk sparingly in P2, though.
Haven't checked to make sure that's kosher...
