Default Summer Salad

This salad is always a hit--and it's super healthy. The nutritional content changes with what brands you use.

Salad:
Baby Spinach
1-2 avocados (med ripe)
black berries
Fat Free or Reduced fat Feta Cheese
Shelled walnuts (baking kind) or almond slivers

Dressing
1/3 cup No Sugar added Strawberry Preserves
1/2 cup Red Wine Vinegar
1/4 cup Extra-Virgin Olive Oil (try a better brand-it does make a difference)
**if too sour, add a half-1 packet of splenda
--whisk and put into container. Lasts about a week in the fridge.
