We've grown a ton of it this year. It makes a nice side dish sauteed in some olive oil and sprinkled on with some seasoned salt. Love it! Unfortunately my mother-in-law deep fries it on occasion and its irresistable! (Sorry, the last thing we should be thinking about is deep fried zucchini!)
My dad keeps telling me to sautee some with italian style stewed tomatoes...
Canadian Living has a variation on lasagna with zucchini and no pasta. I can't post the link, but it's on canadianliving.com, called "Individual Zucchini Lasagnas". Their nutritional info says 387 cals... the version I made was probably under 300.
We're getting out of zucchini season now, but I am always looking for ways to use it up, too.
