I found this dressing on EatingWell.com.
1 cup packed cilantro
1/2 cup extra-virgin olive oil
1/4 cup lime juice
1/4 cup orange juice (Note: To make this SB friendly, I used 1/2 C orange segments, since I was making it in a mini-food processor)
1/2 teaspoon salt
1/2 teaspoon pepper
Pinch of minced garlic
Puree cilantro, olive oil, lime juice, orange juice, salt, pepper and garlic in a blender or food processor until smooth.
Per tablespoon: 53 calories; 6 g fat ( 1 g sat , 4 g mono ); 0 mg cholesterol; 1 g carbohydrates; 0 g protein; 0 g fiber; 59 mg sodium; 14 mg potassium
This works on the Orange Avocado salad, but is also a delicious topping for fish!
