Talking Cilantro Chicken Salad

I love this salad, it has so much flavor you don't have to have salad dressing.

It's really easy to put together and you can make as little or as much as you want.

Here's what you need:

Diced Grilled or Oven Baked Chicken Breast
Chopped Romaine Lettuce
Diced Fresh Cilantro
Chopped Red Onion
Sliced Yellow and Red Peppers
Black Olives


lo fat lo sugar Salad Dressing.

Mix all ingredients together and enjoy!

Edited by Ruthxxx: The original recipe includes corn as an ingredient. Since this is not allowed on Phase II, beans of some sort could be substituted. Black would be nice IMHO.

I know the corn was removed, but you can dice up yellow peppers as a substitute. They add a sweet taste without the starch.
