Default Cucumber Salad

This is a very easy recipe for a Crisp Cuke salad... It is delish! It can be used as a base to add other veggies.

Cuke Salad

2 cukes – slice paper thin
1 onion –slice thin
.5 cup white vinegar
.25 cup water
3 tbs splenda
1 tsp salt
Ground /paprika

Soak sliced cukes in ice cubes with a sprinkle of salt. Chill for 30 mins. Drain all liquid. Add onion .mix water and vinegar and stir splenda in to dissolve. sprinkle pepper and pap on top...
(The ice cubes and salt drain the cuke of some water, between the cukes being super cold, they give you a nice crisp crunch.)

Here's another cucumber salad recipe.

8 oz. sour cream Mod Note - reduced fat only
1 Tablespoon chopped onion
1 Tablespoon chopped parsley
1 Tablespoon chopped chives
Salt and pepper to taste
1 dash red wine vinegar
4 medium cucumbers, thinly sliced and peeled

In a large mixing bowl, combine all ingredients except cucumber slices. Mix with a wire whisk. Add cucumber. Refrigerate at leat 30 minutes. Serve cold. Serves 6.

Thanks for posting the yummy cucumber recipes! They will come in handy with the hot weather coming. Cucumber is so refreshing!
