My mother-in-law showed me how to make this tasty oil and vinegar dressing. Its is so easy! The recipe easliy doubles. Taste great on chickpeas with red onion, bell peppers and cucumber or on a green lettuce salad.
1/4 C Balsamic vinegar
1/2 C Extra Virgin Olive Oil
1 tsp salt
1 tsp dried basil (you can use fresh if preferred)
1/2 - 1 tsp of garlic powder
Fresh Ground Pepper to taste
Place vinegar in a blender with salt. Blend on a high speed for 1 1/2 minutes. This is important! Put blender on low speed and SLOWLY add the oil. Turn back up to HIGH and blend for another minute. Add the basil, garlic and pepper and pulse for a few seconds. ENJOY!!! Any extra dressing can be stored in the fridge.
