Shrimp salad with avocado and edamame

  • I wanted to find a shrimp and avocado recipe for lunch. Didn't find any here, but Kalyn to the rescue! I found her recipe here, but I modified it significantly (made about 1/2 of her recipe, no olive oil, more edamame and different seasonings) so check hers out for more details.

    Shrimp and Avocado Salad with Edamame
    (Makes about 2 servings, original recipe created by Kalyn)
    • ~ 6 ounces cooked shrimp (I used 60-80 count size ("medium") frozen uncooked shrimp and boiled them for a few minutes)
    • 1 avocado, ripe but not mushy, diced in pieces about 1/2 inch square
    • 1 cup shelled edamame, cooked if required by package instructions (this is probably double what the recipe called for.)
    • 2 sliced green onions
    • 2 T fresh squeezed lime juice
    • 1/2 tsp. Old Bay seasoning, or more to taste
    Basically I just dumped everything together, and stirred gently to combine. Maybe my avocado was a little too ripe, but it and the lime juice made a "dressing." Serve immediately -- on a bed of lettuce (ww pita for Phase 2?)
