Chop Chop Salad
Chop into 1/4" pieces the following, or use your own favorite combination of raw veggies. All amounts are approximate depending on what you have on hand and what you prefer.
1/2 head cauliflower
2 or 3 heads of brocolli
1 red pepper
1 green pepper
1 orange pepper
1 yellow pepper (or any color pepper you prefer)
1 sweet onion or a mixture of red & white sweet onions and some minced green onions
a stalk or two of celery
2 carrots (not for Phase I)
Place all in a container with a tight lid and pour over it your favorite salad dressing. I like a simple vinegraite (sp?) with a bit of sweetener added. Let it marinate in the fridge for several hours, turning it upside down occasionally to ensure that all the veggies get marinated. Sprinkle with salted shelled sunflower seeds.
This will keep for several days.
Change isnít easy. But if you donít change, you stay the same, and whereís the fun in that?
