Default Mock Tuna Salad (Chickpeas)

For the record, I love real tuna salad and it is completely legal on SB if made without sugar (not Grandma's way). But I found this recipe in the Vegetarian section of the forum and it is so good I thought it bore repeating here. No, it doesn't taste exactly like tuna salad, but it IS amazing how tuna salad-ey it does taste. If you are looking for a vegetarian option, or another way to get beans in your diet, give this a try.
Thanks to nelie for posting this great recipe and giving me permission to share.

Mock Tuna Salad

* 1 15-oz can garbanzo beans
* 1 stalk celery, finely chopped
* 1 green onion, finely chopped
* 2 tsp. mayonnaise or mustard
* 1 tbsp of lemon juice or vinegar
* 1 tbsp sweet pickle relish (made with Splenda) or dill relish
* 1/4 tsp. salt (optional)
* sprinkle garlic powder (optional)

Mash the garbanzo beans with a fork or potato masher.
Leave some chunks.
Add the sliced celery, chopped onion, mayonnaise, lemon juice or vinegar, and relish.
Add salt and garlic powder to taste.

A hot/appetizer option: "I mixed/crushed them with little chunks of tomato, pickles, and red onion and added mustard and a tsp of olive oil. I baked it for about 10 minutes just to have it warm and it was fantastic!!! We had them with crackers and veggies."

Some options I want to try when I make it again:
Curry powder
Fish sauce to add a "fishy" taste

I just ate half of it so I would say makes two servings.

Wow...I would have never thought of that on my own. Definetly going to give it a try. Would be a great inexpensive take-to-work lunch option!

I was always bringing canned tuna as a quick/cheap lunch and have it over salad, until I read about the toxin levels in it. I also read that women with PCOS, such as myself, have to limit it to one can every 1-2 weeks because the toxins can mess with hormone levels.

This will definetly help me out a lot because lean cold cuts can be expensive!

I wonder if the old bay seasoning would make it more fishy? I don't know if thats sbd friendly so I will have to check. sounds like a great recipe tho! I bought some hummus the other day from the store and learned I should not do that! It was a big RED food for me. I wanted more and more~

Since we can't get Old BAy up here as far as I know, I found a copycat recipe. I've got mace and cardamon on my shopping list now!

This is a unique recipe, I still haven't tried it, but I found a Mock Tuna Salad recipe as well which I posted, but the ingredients are different from the above and it wasn't as popular as this version. I think chickpeas are an incredibly versatile food and I was wondering if maybe one could make a cheesecake with half pureed chickpeas and half cream cheese? Don't know.

I think I'm gonna try this mock tuna salad recipe later, I have been meaning and meaning and meaning to cook my dried chickpeas but still haven't got around to it.
