Can't vouch for this recipe, just sounded good and easy, so let me know if anyone tries it!

Peanut Butter Cookies



Ingredients:

1/2 cup old-fashioned peanut butter

1/4 cup agave syrup

1-1/2 cups whole wheat flour

2 eggs, beaten

1/4 cup safflower oil

1/4 cup milk

1/2 teaspoon vanilla

1/4 teaspoon salt

Method: Cream the peanut butter and the syrup together. Add flour and remaining ingredients. Stir well. Drop the batter by teaspoonfuls onto an oiled cookie sheet. Flatten with a fork, dipping the fork in cold water between cookies, and bake at 350 degrees for twelve to fifteen minutes. Makes two to three dozen cookies.

Nutty Apple Bread


1/4 c Peanut butter
2 tb Margarine
2 lg Eggs
1/3 c Honey
1 1/4 c Whole wheat flour
1 1/4 ts Baking soda
2 ts Ground allspice
3/4 c Rolled oats; quick-cooking
1/4 c Wheat germ
2/3 c Plain yogurt
1 c Apples; chopped fine
1/4 c Walnuts; chopped



Preheat oven to 350 degrees; coat a 9 x 5-inch loaf pan with nonstick cooking spray. In a large bowl, mix the peanut butter, margarine, eggs and agave until smooth; set aside.

In a medium bowl, sift together the flour, baking soda and allspice. Add the oats and wheat germ; mix thoroughly.

Combine the flour mixture with the peanut butter mixture; add the yogurt, apples and walnuts and blend well.

Pour the batter into the prepared pan and bake for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean.

Remove from the pan and cool. Store in plastic wrap. Makes 1 loaf.

Sesame Bars

2/3 c. agave
1/4 c. peanut butter
1 tsp. vanilla
1/2 tsp. salt
3 c. sesame seeds
1-1/2 c. unsw. shredded coconut

Mix together the first four ingredients. Add sesame seeds and coconut. Mix well with your hands. Press into a 9" X 13" (or smaller) baking dish with hands dipped in water. Bake at 300o F For 30-40 minutes. Cool. Cut into squares.

Sesame Soup Crackers

1/2 c. water
6 T. oil
1/2 tsp. salt
2 c. whole wheat flour
1/2 c. sesame seeds

Blend the first three ingredients on high for 30 seconds. Pour into a bowl and add remaining ingredients. Stir together well and knead briefly. Set aside for 10 minutes. Then place on a cookie sheet and roll out cracker thin. Sprinkle with salt (opt.) and a generous amount of sesame seeds. Roll the seeds into the dough. Score. (Draw cracker-size squares on the dough with a knife.) Bake at 350o F for 15-20 minutes. Watch carefully.

Found this on the web and convereted it to be SB LEGAL, but haven't tried it!

Pumpkin Bread or Rolls

Stir in a large bowl:

2 c. hot milk
2 c. whole wheat flour
1/2 c. agave

Mix in:

1 T. dry yeast

Let sit for 20 minutes. S

Stir in:

1 c. cooked pumpkin, yellow winter squash, etc.
2 c. oat flour
1/2 c. oil or applesauce
2 tsp. salt
1 T. lecithin

Add whole wheat and oat flour until you can knead. Knead and add flour right in the bowl until it is elastic, about 7 minutes. Let the dough rise until double, then make into rolls or 2 large loaves. Put into sprayed pans. Cover and let rise. Bake at 350o F for 35-40 minutes for the loaves and less for rolls

Default Apple Cake

Ingredients:
1/2 cup butter
1 cup water or apple juice
3/4 cup agave
2 cups oat flour (put oatmeal in a blender or food processor to make flour)
1/2 cup ww pastry flour
1 1/2 t cinnamon
1 t salt
1 t baking powder
1 t baking soda
2 eggs
1/2 cup yogurt
2 cups peeled and chopped tart apples (I use Romes)

Method 1:
Put butter, water, and agave in a saucepan, heat to boiling. Remove from heat. Add oat flour, ww flour, salt, baking powder and soda. Mix well. Add yogurt, and beaten eggs. Fold in apples. Spread into a greased 13x9"pan, and bake at 375 for 30 to 40 minutes.

Method 2:
Cream butter, water, and agave. Add eggs, one at a time. Add yogurt. Stir in flours, baking powder and soda and salt. Fold in apples. Pour into a greased 13x8" pan, and bake 30 to 40 minutes at 375.

Method 1 produces a very dense cake, that is very moist. Method two is also moist, but not as dense. It has a more crumbly texture than method 1. Both are very easy.

VARIATION: Instead of apples, you can add blueberries, nuts, peaches, etc. Or you can omit the fruit, and just have the snack cake.

Makes a good easy breakfast.

The cake is good served warm with a bit of whipped cream on the top.

I can't remember where this came from off the web, but I subed agave to make it SB LEGAL

Oatmeal Ginger Crunch Cookies

Makes 1 dozen cookies

1 1/2 cups oatmeal
1 1/2 cups whole wheat pastry flour
1/2 teaspoon sea salt
1 teaspoon nonaluminum baking powder
1 cup currants (omit or sub chopped dried apricots)
1 cup walnuts, toasted and coarsely chopped
1/2 cup canola or light walnut oil
1/2 cup agave
Zest of an orange, minced
1/2 cup orange juice
1 teaspoon vanilla
1 tablespoon fresh ginger, peeled and grated

1. Preheat oven to 350°F. Lightly oil a baking sheet or line it with parchment paper.
2. In a large bowl, combine dry ingredients. In a smaller bowl, whisk together wet ingredients. Stir into dry.
3. Transfer heaping tablespoons of dough onto baking sheet. If uniformity is important, use a 1/4- or 1/3-cup scoop. Flatten cookies with the back of a fork to make 3- or 4-inch round shapes. Dip fork in juice to keep it from sticking.
4. Bake cookies until edges and undersides are golden, 15 to 20 minutes.

Default Stuffed Eggplant

1 large eggplant -- sliced
4 Tablespoons olive oil
1 Tablespoon balsamic vinegar
2 cups ricotta cheese
1/4 cup parmesan cheese
1 cup black olives -- diced
3 medium pimiento peppers, canned -- chopped
2 teaspoons basil -- or 6 fresh leaves
4 Tablespoons parsley
1 clove garlic -- minced

Sprinkle the eggplant slices with salt, and set aside. In a large bowl, mix together the peppers , olives, garlic, ricotta, parmesan, basil, parsley, and adjust seasoning. Rinse eggplant slices, and brush with olive oil and balsamic vinegar. Broil for a few minutes, turn, brush again, and broil. Remove. Brush with more oil, on one side. Place two Tablespoons of filling on the slice, and fold the ends over to meet. Secure with a toothpick. Serve.

Found this one on the web from a restaurant in NY, sounds pretty good!

SWEET POTATO SOUFFLE

1 1/2 pounds sweet potatoes or yams (3 medium)

5 eggs, separated

8 ounces cream cheese

3/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons plus 1/2 cup honey (USE AGAVE)

1/2 cup freshly grated Parmigiano Reggiano cheese

2 tablespoons chopped fresh thyme



Preheat the oven to 325 degrees.

Bake the unpeeled sweet potatoes for 1 - 1 1/2 hours, until easily pierced with a knife. Let them cool completely, then peel and cut into large chunks. Set aside.

Cream the egg yolks and cream cheese in a food processor or with an electric mixer until creamy and pale yellow, about 3 minutes. Add the cooked sweet potatoes and process for 2 to 3 minutes, until smooth.

Add the salt, pepper, 2 tablespoons of the honey,(agave) the cheese and thyme and process for 1 more minute, until well mixed. Pour into a large bowl and set aside.

Beat the egg whites with an electric mixer until they form stiff peaks, about 3 to 4 minutes. Fold the egg whites into the sweet potato mixture 1/3 at a time, don't over mix. Pour into a lightly greased 9 x 13 inch baking dish.

Bake for 30 to 40 minutes, until the top is lightly browned and beginning to crack. Serve drizzled with remaining 1/2 cup honey

Here's one more option you can try:

SWEET POTATO SOUFFLE

Vegetable spray
2 1/2 cups of cooked sweet potato pulp
2 cups of egg substitute
1/4 cup of honey USE AGAVE
2 t cinnamin
1 t nutmeg

Preheat oven at 350 degrees F. Spray a souffle dish or any type of serving bowl making sure it has no metal in it with vegetable spray.

In a bowl mix the rest of ingredients. Place in prepared dish and bake for approximately 30 minutes or until a knife inserted in center of dish comes out clean.

This dish can also be made in the microwave. Microwave it for 5 minutes, turn bowl and continue cooking until a knife inserted in center of dish comes out clean
