Default Squash pizza

Lately I have been making a delicious, yet simple meal. I LOVE pizza, and I knew I needed to find a healthier alternative. I have been cutting up squash (mainly zucchini, summer, or pattypan) then broiling it after lightly coating it with olive oil. After it starts to brown, I take it out then top it with pizza sauce and what ever toppings (mostly healthy!) I want. This has been a new weekend favorite. It's not really a recipe, but I thought I'd share the tip!

That sounds wonderful! I cut a large zucchini in half, scoop out the seeds, brush it with olive oil, sprinkle it with garlic powder, roast it, and top it with a little bit of cheese, but it never occurred to me to slice it and use as a "crust" for pizza sauce and toppings. Thanks!

Great idea! Thanks for sharing. I love pizza and this might help stave off some cravings.
