Default Slow Cooker Recipes?

I have a 3 month old baby, and am finding it hard to cook at night by the time I get off of work, pick up the baby, do the million and one chores I have to do, etc.

I'm going to buy a slow-cooker in hopes of coming home to dinner already prepared. Do you have any healthy, easy recipes to share for it?

I like this one: Crockpot chicken stew with mushrooms. I haven't tried it with wine, and it's still good. If I don't have tapioca, I don't add that either. I add more liquid, tho.

I finally bought a crock pot and made an easy recipe to try it out. I made low-fat chicken chili, it came out great, I'm so looking forward to trying new things!

I make a healthy roast in the crock pot:
-1 bison roast or lean beef roast
-1 teaspoon each: garlic powder, dried basil, dried rosemary, dried parsley
-1/2 teaspoon red pepper flake
-2 bay leaves
-hot water to cover roast halfway

Cook on high until shreds. I love this with some grilled peppers. It is also great on a whole grain roll.

Healthy Mexican Chicken Soup
-2-3 chicken breasts (can be frozen)
-1 can low-sodium black beans....drained and rinsed
-1 can chunky rotel- drained and rinsed
-1 can regular rotel with juice
-1 tblsp dried cilantro
-1 tsp garlic powder, cumin, chili powder
-1 tblspn tomato paste

Cook on high until chicken shreds. I like to serve over brown rice or corn. REALLY hearty and satisfying.

Here's the easiest crock pot recipe EVER!

3-4 chicken breasts
1 jar salsa - whatever you like - plain, green, fruity, whatever!

Cook on high 4-5 hours or low 8-10 hours. You can serve it over rice, add chicken broth & black beans to make soup, shred it for tacos or taco salad or wraps, eat the leftovers cold over salad.

How do you count this? 1 protein and 1 vegetable?

I'm new to this and am still trying to figure out how to count the things. I only get two proteins. I'm in book 1.

I also make minestrone soup (similar to this one, but everytime I make it I experiment with different vegetables and amount of seasonings.

I've also made whole chickens that come out really good... and since the skin doesn't brown or crisp in the slow cooker you won't be tempted to eat it!

Crockpot recipes are usually pretty healthy, as long as you avoid full-fat cream soups and cream cheese.

Her pasta fagioli recipe is awesome.

Using the crockpot was the one way DH and I made it through the first three months of our son's life. Without it, we would've starved or gone broke eating out.

oh, I've made her ziti a couple of times, it comes out really good! although I'm not sure if it's really diet friendly
