I make lasagna that is very light. It's with whole wheat lasagna noodles, turkey burger meat sauce with light tomato sauce, fat free ricotta and skim mozzarella. You wouldn't know the difference at all!

what does he like to eat? sometimes you can just switch to olive oil or reduced fat cheese.

Cooking Light has lighter versions of just about anything you can think of.

Turkey chili. My husband HATES the thought of eating turkey as a substitute for beef, but loves and adores turkey chili.

If you're willing to spend a little time in the kitchen, try this recipe from Ina Garten: Chicken with 40 cloves of garlic. Modify the recipe by cooking the chicken with just olive oil, no butter; by adding two cups of stock in addition to the wine; and by leaving off the cognac and heavy cream. Trust me, the recipe doesn't suffer from omitting them; it's still plenty good.

It seems like a TON of garlic, but it stews down and actually has a quite mild flavor. This is a go-to recipe for me whenever we have company over.

Try the Hungry Girl website or on of the Hungry girl books. She uses light ingredients for food that still tastes good.
