I always use Louisiana Seasoned Fish Fry for fried green tomatoes. It only has 20 calories, 5 grams of carbs, 0 fat and 135 mg of sodium per serving (2 tsp). I bet you could use that to coat them with before baking them. Maybe just use water or skim milk to wet them first (not sure how well that would stick).
Sometimes the smallest step in the right direction ends up being the biggest step of your life. Tip Toe if you must, but take the step.
