My dad and SO were having steaks on the grill. Because of a recent decision to become a vegetarian I decided to make vegi skewers. I had zucchini, red onion, yellow and green bell pepper. I brushed them with lite balsamic vinigrette and paired them with snack size cottage cheese cup and half a pita grilled with a little bit of olive oil and spread some hummus on it. It was really good and really filling
