Skillet Lasagna (Points Plus Values Included)
Easy 1 Dish Meal, tastes just like Lasagna but without the hassle or expense!
Skillet Lasagna
1 lb ground meat (Beef or turkey, adjust points accordingly, I calculated for 95% lean ground beef)
1/2 C. onion
3 medium garlic cloves, minced
1 can diced tomatoes (15 oz can)
1 1/4 C. water
8 oz can tomato sauce
1 Tbsp dried parsley
1 tsp ground basil
1 tsp ground oregano
8 oz (came out to about 2.5 C.) dry pasta
1 C. fat free cottage cheese
1/4 C. reduced fat Parmesan cheese
1 egg (equivalent egg substitute/egg white can be substituted for 1 egg)
1 C. shredded part skim mozzarella cheese
Brown ground meat with onions and garlic. Drain off fat. Add tomatoes and tomato sauce. Simmer 2 minutes. Add seasonings and water. Bring to a boil, add dry pasta, cover. Simmer 5-10 minutes or until pasta is al dente and most of the liquid has been absorbed. Meanwhile, mix together cottage cheese, parmesan cheese and egg. When most of the liquid has been absorbed, drop cheese mixture by spoonfuls onto pasta mixture. Cover and let sit 5 minutes. Turn off heat, add shredded cheese, recover and let sit 5 more minutes.
Yields 6 servings, 10 PP per serving.
*My husband who is a Lasagna Snob and a HUGE fan of my elaborate homemade lasagna said this was just as tasty! He said it satisfied his urge for lasagna and he wants it in the monthly rotation!
