I will be starting NS soon! Glad to hear you are liking it so far. How do you do lunch and dinner only? Don't you have to choose breakfasts and snacks with the plan?
To answer your question, NS seems to be pushing protein, so maybe eggs? Or a low sugar cereal if you'd enjoy that more? I know they have a couple of cereals on their plan, so if you can match up a normal cereal with the nutrition stats of one of theirs, I'm sure that would work perfectly well.
