Default Carb-Sensitive Dieting (Thread 5)

This thread is for carb-sensitive dieters who are following various low-, slow- or moderate-carb diet plans. Come join us, posting as much or as little as you like, as we share our diet plans, menus, recipes, exercise, daily progress, and healthy tips, and chat, inspire, motivate, and encourage each other! Please let us know what carb-conscious plan you are following, even if it's your own individual plan, and we will do our best to support you!

As for me, I am doing a modified version of Tim Ferriss's Slow Carb Diet. I like it because I never feel "starved" (as I always have while dieting in the past) and that's because I no longer experience daily blood sugar spikes and drops due to quick-burning, high glycemic index carbs. I also never feel deprived because this diet includes one day each week when I can eat ANY foods I want. And although exercise is recommended, it is not required. I'm not much of an exerciser, although I am getting better, but I try at least to walk for 20-30 minutes each day. The Slow Carb Diet is not for everyone though. Everybody's different!

The gist of the actual Tim Ferriss Slow Carb Diet is: For 6 days of the week, eat lean, preferably organic meats and fish/seafood, eggs, legumes, and non-starchy veggies. (Sugar-free Jello, 16 oz. of diet soda per day, and 1-2 glasses of red wine per day are also allowed.) On these 6 days, avoid breads/grains, dairy (except for cottage cheese), pasta, fruits (except for tomatoes and avocados), sweets, and starchy vegetables. The 7th day of the week (you choose the day) is a "cheat day," when you can eat anything at all as much as you want, including anything on the forbidden list. The cheat day is recommended to keep you from feeling deprived so you'll stay on the diet and to shake up your metabolism each week to keep it from stalling. Ferriss recommends eating 20 grams of protein with each meal, eating 30-60 minutes within waking up in the morning, eating the same meals over and over, having five low-carb days before taking a cheat day, and some other fine details, which I don't really know because I haven't read his book, The Four Hour Body, nor do I intend to. I'm happy with my own version of the diet!

I am a big believer in doing what works for you (as long as it DOES work), so I have tweaked the Slow Carb Diet, and my personalized plan looks like this:

For 6 days of the week, I eat
--meat (not necessarily lean or organic)
--fish
--legumes (including baked beans)
--eggs
--non-potato veggies
--veggie-like fruits (like tomatoes, cucumbers, squash, etc.)
--nuts and seeds in moderation (a handful)
--peanut butter in moderation (not natural, just regular Jif)
--yogurt
--cottage cheese
--other dairy in moderation
--black and green olives
--condiments and sauces (including ketchup and honey bbq sauce)
--full-fat salad dressings (usually ranch)
--breaded convenience/fast food meats like chicken tenders (It's too much trouble to try to peel the breading off, so I just allow it since I don't eat these foods very often.)
--protein bars on occasion (for convenience--I've found I have to eat these sparingly because they can trigger my hunger)
--fibrous fruit and berries in moderation (I didn't add this until I reached my goal of a normal BMI. So far it's working for me without a problem, but I don't overdo it)

and I drink
--Water, often flavored with Mio Liquid Water Enhancer (I try to drink a half oz of water for every lb I weigh, daily)
--Diet Dr. Pepper (I'm addicted to this and I'm trying to stay away from it, but I still don't want to remove it from my list!)
--Green tea, sweetened with Splenda

For these 6 days, I avoid
--breads, cereals, and grains (including corn)
--pasta
--fruits (except veggie-like fruits)
--potatoes
--sweets

I count no calories. I count no carbs. I count no grams. I don't eat within 30-60 minutes of waking up. I don't eat every 4 hours. I don't pay attention to numbers at all. I don't necessarily eat the same meals over and over. (If I do, it's simply because I like those foods!) I eat when I'm hungry. I stop when I'm full, and I try not to eat late at night, although if I'm hungry, I will.

The 7th day of the week (I've chosen Saturday, although I'll move it for a special occasion) is what Tim Ferriss calls Cheat Day but what I call Carb Day. (It's not cheating on the plan but rather an actual part of the plan!) I can eat WHATEVER I want as much as I want on Carb Day, but again, I eat when I'm hungry and stop when I'm full. Plus, I do try to be mindful that the more quick carbs I eat, the more I am going to crave them, so I try not to go "all out" (although occasionally I will). I do gain between .5 and 2.5 lbs the day after Carb Day, but it's just water weight and it usually falls back off in the next couple of days while I continue to lose fat. It's all figured into the plan, so I don't worry about it.

I always fluctuate between 197 and 201. I was at 201 and am now down to 200. I think I might go back to daily weighing for a while, until it frustrates me too much. Just thankful I don't go higher. Jacqui, I was reading through your intro post and realize that you eat pretty much like I do, but I do carbs here and there at dinner and don't have a carb day. I would be happy to never have the starchy carbs, but I make them for DH and occasionally indulge. I do notice that when I have them, it's very hard to stop at a tiny portion. If I stay away from them altogether, I don't crave them. You have done so well with this, I don't see any need for you to deviate. Same with PQ, what she's doing works for her. I know my problem is giving in to those starches before thinking it through.

PQ I strongly prefer Coke to Pepsi. That's part of the reason why I don't order it when eating out. Most places have Pepsi. It's Pepsi at the casino, but it's free. So I like "free."

This morning DH brought breakfast from McDonald's. I had 2 Sausage/Egg McMuffins without the muffins. It broke my heart to throw them out for the birds, but if I didn't, they would end up in my mouth. So I had 2 eggs and 2 pieces of sausage. I don't like the cheese, but it's too much to ask DH to remember to say "no cheese." LOL Now he's mopping the floors. Gotta love him. I know he's being so nice because he wants to go to the casino. I don't want to. We'll see who wins.

PQ I'm sorry to hear Bro is back in the hospital. I hope they can find the problem and get it taken care of. He has gone through so much, expecially at his age. My niece Nancy came home but only lasted a week and is back in the hospital. She is having difficulty breathing and they think it's from scar tissue from the trach. She is also having an irregular heart beat.

Carol Sue, it's definitely no fun to weigh everyday! I'd be delighted to weigh on every day that I go lower on the scale. It's just those ticks back up that are killer, lol! Still, it keeps me honest. I do better when I have to step on the scale each day and even better when I have to come here to report it! : I'm sure if I didn't have a Carb Day, I'd have a terrible time resisting carbs at dinner when I have to make them for my DH too. The only way I get through it is by telling myself, "You can have it on Saturday." And like you, once I eat a little bit, it is so hard to stop! That's the nature of quick-burning carbs, I guess. They make you crave them when you have them! I do much better abstaining altogether...until Carb Day that is! I know you cannot do a Carb Day because that would be too many carbs in a single day and would play havoc with your blood sugar. If I didn't have a Carb Day, I'd be doing what you're doing, trying to eating just a little bit each day. That is so hard though! I think you are doing great maintaining within a 4-lb range! I haven't figuring out how to do that yet, but hopefully I will! I'm gonna place my bet on DH on the topic of the casino, lol! I say it's going to be too hard to say no if he keeps being all sweet and helpful and generous! Plus you won't have to cook! I am so sorry to hear Nancy is back in the hospital too! I have her on my prayer list also!

PQ, it looks like a great day for gardening! Any news on your brother today?

Hi, all! Just a quick note....pizza time! Team of cardiologists came in to see bro and still can't figure it out. mom said he's been overdoing it on pain meds, fell, and wet the bed one night, so she took them all away from him like you do for a child. She's also said he's been mixing alcohol with them. But doc don't think that's it! I think it is. He needs counseling and back surgery asap. He won't answer my texts because he know I'm going to Kay into him.

PQ, sounds like Bro is being a bad boy. It's hard. He has been through a lot and I'm sure he's depressed over it and just wants to live a normal life. But if he doesn't get some control, there won't be a life. I can relate to this, with my diabetes. I know in my heart of hearts that there are some things I just cannot eat. And every time I indulge and get a BS spike, I want to kick myself. I swear I won't do it again, but I do it again. I think my problem will start to effect the quality of my life eventually, but with Bro, it's going to effect whether he will have a life or not. Much more serious. Yes, he probably does need counseling. Back surgery is probably going to depend on his compliance.

Jacqui, I CAN do fairly well with not eating the carbs that I prepare for DH, but it's so easy to pop a fried potato into my mouth! Also, when I make mashed potatoes, I should fill the pan with water as soon as he is finished with it, or I will finish it off while I'm cleaning up. It's not a matter of waiting until Carb Day when I can have them. Because of my diabetes, there cannot be a Carb Day. My only option is a small amount at a time, and the best option is to do away with them altogether. It IS very hard to stick to a small amount. Much easier to have none. That first bite makes me want to have the second bite, and third, then I'm out of control and my BS shoots up. I quit smoking cold turkey in May 1993....never looked back. But you can't just stop eating. It's much harder to stop carbs cold turkey, even though they damage a diabetic body as much or more than cigarettes. My sister-in-law dieted herself to a 97 lb weight loss, but can't quit smoking. I don't understand that.

By the way, DH won and we went to the casino. It was OK. Not a total loss. LOL

PrairieQueen, Carol Sue expressed what I'm also thinking concerning your brother. It must be so hard for him, and for you and your family worrying about him.

Carol Sue, skipping high glycemic carbs probably would be best, but oh, that's so hard to do! I know I can't do it. I just don't have that kind of willpower. I can skip them for 6 days a week but that's my limit, haha! Did you win at the casino?

Woohoo, I'm down to 177 today! Today is my Carb Day and I have a wedding to go to. (And I'll be watching over my grandbabies!) I don't want to go overboard with carbs today like I have been doing on Carb Days for the last 3 months. I skipped toast for breakfast, which I always make for DH. I have mint M&M's in the kitchen and I imagine I will get into a bag of those. It's possible an Oreo may make it into my mouth also and I know I'll have a slice of wedding cake but that's really as far as I want to go. No sandwiches or anything like that. I don't remember what I'm having at the reception but I imagine it's along the lines of chicken and some green veggie. So I'm reserving my Carb Day for a few sweets today but no breads, potatoes, pasta, etc. It's helping that I'm not as hungry as I have been. You know how when you start a diet anew, after about a week or so you kind of reach a point when your hunger subsides and you feel full faster. Thank goodness, I am starting to feel that again!

Yesterday's menu...
Break - sausage mcmuffin
Lunch - 1/2 portion of leftover lemon/mushroom chicken pasta
Snack - dill pickle, 2 slices salami
Dinner - homemade pizza w/turkey pepperoni

Went walking and asparagus picking at a local farm this morning. Bought some "backup" plants for garden so I have some early stuff and different varieties. Retilled a portion of small garden for a second planting of beets and spinach and some red onions and cilantro. I've got to acclimate the plants a few days before I set them out....still a little chilly here for tomatoes and peppers.

I hit 10,000 steps at 2:30 today! I needed to....I'm making copycat Cheesecake Factory chicken Marsala, asparagus, and mashed potatoes tonight. Ive been fantasizing about it for a week now, so time to make.

Bro just texted me that he has pericarditis, which is treatable. I don't have details yet, but I'm sure I'll get them tonight when he's bored. Laters!

PrairieQueen, what does that mean when you say you have to acclimate your plants to the weather? We never grow veggies, but my DH decided to pick up some tomato plants. We haven't planted them yet, but now I'm wondering what we should be doing with them, lol! I'm so glad to hear your brother's condition is treatable!

I still weigh 177 today but that probably means I will have a jump up tomorrow. I don't know why my body has that delayed reaction to storing extra Carb Day water weight but it often does. It'd be awesome if it decided not to jump up, but that doesn't happen very often. I was proud of myself for sticking to my plan yesterday and staying moderate with the carbs. At the wedding reception, potatoes, 2 types of pasta, and rolls were served, but I avoided them and stuck to satisfying my sweet tooth like I said I would. Yesterday, I ate one Oreo (that was probably the hardest to do. I really wanted more), mint M&M's, and a thin slice of wedding cake.

Jacqui and PQ, both being in Ohio you're weather should be similar for planting tomatoes. We never plant ours here before Memorial Day, but we buy them a couple weeks ahead of time. We only know of one place to buy the ones we want and they don't have many, so you have to get them early. They are called Fantastic Tomatoes. They grown a smaller tomato than the Big Boys that we're all familiar with.

PQ, glad to hear that they found the problem with Bro. Hope he does well with the treatment.

Thanks Carol Sue! Happy Mother's Day to you too! DH bought beefeater tomatoes. We know nothing about planting vegetables, but DH wanted to give it a try because this is the first time we haven't had dogs. The dogs kept us from having any kind of garden before. When we bought our house on the river, it had a garden and the dogs ate everything in it. (Not many garden fences will keep a giant dog from going where he wants to go!) If I had tried to hand-feed the dogs veggies like that, they wouldn't have eaten them, but there was something about finding them in that garden that made them eat them up!

Jacqui in our part of Ohio, Mothers Day seems to be the magic day that signifies planting. However, it was early this year and I always wait until the weekend before Memorial Day for my store-bought plants. I plant me own from-seed plants Memorial Day weekend or the week after. This year, I'll have to do before because we're leaving. I will also plant more store bought mid June because you can get a bargain on them at the nursery.

As for acclimating them, I set them outside in the day and bring back on at night until the last few nights. Then I plant with s little miracle grow. I also bring them in if there are any rough storms.

Bro is back home feeling much better. Treatment for pericarditis is ibuprofen! They still don't know we his liver enzymes are up but took more blood today for another round of tests. He has symptoms of both hep b and c. Of course he tested negative for all this when he was admitted back in November. The only blood transfusions he had was since in the hospital. They're not saying he had it but they're stumped right now.
