Default barbacoa how many calories in this stuff alone?

I was just wondering how many calories and carbs this stuff has. My mom asked me yesterday after she bought some at the HEB food store and I have no clue. I looked online but couldn't find anything except some restr. called chipotle or something like that. Any info?

well, chipotle is a restaurant and barbacoa is one of the meat options for their burritos, etc. The info online refers to the spiced meat only I believe Nutridiary says 5 oz is 285 calories (which should be the same as chipotle's website), and that sounds like it makes sense from other meat products. You could do worse than using the info from the site.

As it is a meat product with some spices, there shouldn't be a substantial number of carbs. Again, going with nutridiary's info, 5 oz is 285 calories, 16 g of fat (4 saturated), 1 g of carbs and 34 g of protein.

Default What is barbacoa?

Having lived in south texas for many years, I am familiar with various types of mexican food. Barbacoa is a version of mexican barbeque. Originally, you would take a cow's head [skinned and cleaned of course] and without going into recipe details, steam it overnight. Everything will be fall off the bone tender. However, in view of mad cow disease and all the other prion diseases, now only the cheek meat tends to be used. The texture is of a meat that is very gelatinous and fatty and also very tender. The flavor should be mild. Any spices are added at the table. The caveat will be that this is the last thing a dieter should be indulging in. Oh yes, remember I am writing this from the view point of a south texan, not a californian, they tend to do strange things to mexican food.

Barbacoa, like pot roast, is typically made with very fatty cuts of meat. It's cooked overnight, and usually the only flavorings it receives are from spices and water.

The closest thing you'd probably be able to compare it to, to get a calorie count, is pot roast. The counts will vary depending on the exact cut of meat, but it's not going to be a low calorie or fat protein option for you.

Still a good question though.... being half Mexican I've found that it's really hard to find some of the calorie/nutrition information on some of our ethnic foods. Barbacoa I would have already assumed to be totally not on the lean side though, because if properly made its totally delicious and dripping fat!
