The 35 extra points are, as you said, to be used as you see fit during the week. You can use all of them, none of them, or somewhere in between. If you want to use all 35 on one day for a big party or something, go for it. If you want to divide it equally to have 5 extra points per day, that works too. They're kind of like your safety net.
Activity points aren't introduced to new members. You'll get the "start moving more" book on week 2 or 3 I think, it will discuss getting started with activity and how to calculate activity points. If you have any more questions about it at that point your leader will gladly assist you.
