Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup Ricotta cheese
1 tablespoon chopped fresh basil
OR
1 teaspoon dried basil leaves
1 tablespoon lemon juice
1 tablespoon sour cream
6 ounces white tuna in water -- drained, canned

Mix all ingredients in small bowl. Serve immediately or chill
for a short
time and serve.

Alternately, place all ingredients in blender or food processor.
Cover and
blend on medium speed until smooth. Line 2-cup metal bowl or mold
with
plastic wrap. Place mixture in bowl. Cover and refrigerate about
2 hours or
until set. Carefully unmold onto serving plate.

I feel like I'm stalking you Jen but really I'm not...LOL I really love new recipes and this one looks great.. Only thing is I personally would use salmon instead of tuna.. LOL I'm just not a tuna person..

You again! :yikes: Just kidding! Salmon sounds like it would be good. I have to admit I've never eaten canned salmon (never had the nerve) but I can imagine a filet flaked up and in it. Spicy salmon would be good, also. There is a recipe somewhere around here that has a chipotle pepper glaze on it that gives me an idea (It also has sugar, though) and I bet that some salmon broiled with peppers or hot sauce would be great in this. A nice spicy spread!
